Before the demonstration: bring your kitchen brief

Menu & output. List actual dishes, portion sizes, peak demand and the texture and taste you need to reproduce.
Kitchen fit. Record available space, access, power, water, drainage and ventilation; have installation requirements checked locally.
People & workflow. Clarify who prepares and loads ingredients, plates food, cleans equipment and handles exceptions.
Acceptance evidence. Request a trial using your recipes, a written cleaning procedure, service terms and an itemised quotation.

For restaurants, canteens and central kitchens: assess the actual workflow, not just the cooking cycle. Suitability must be established for the specific site and model.
